Earlier this year, I really wanted to try overnight oats. I'm a social media manager for food bloggers, so I see all the trends and delicious recipes, and oh, those overnight oats looked so good! Then I tried them. Nope. I just couldn't do it. So mushy!

Recently, I discovered steel cut oats. 
Overnight oats made with steel cut oats? Now, that's something I can do! They've got more chew to them than rolled oats, so when they're soaked in milk overnight, they don't turn into a jar of goo. No mushy goo, for the win!

Of course, discovering steel cut oats meant I had to scour the Internet for recipes because, well, fixating is what I do. I have tried several recipes, and made up a few of my own over the last few weeks.

Granted, in Florida, it's a weird season that's mostly sunny and warm, but when the cooler temperatures finally do visit, it's nice to have warm foods to come home to, isn't it?

I'm not big on sandwiches. I never have been. I do, however, enjoy the occasional sandwich, one  of which is the Philly cheesesteak. 

To accommodate Alexis' vegetarianism, I try to make as many vegetarian meals as possible while staying within our grocery budget. When I can, I try to convert 'regular' meals to vegetarian meals.

That's what I've done with the Philly cheesesteak sandwich.

I love cooking in the fall. I don't enjoy cooking at any other time, but for some reason I'm OK with it during the autumn season.

One thing I appreciate, during these busy homeschool days, is the ability to use the crockpot. There's something so wonderful about coming home from a day of activities, nature studies or field trips to find dinner is ready and waiting for us.

Also known as hobo stew, mulligan stew and beggar's stew, this delicious, slightly recipe is great for fall and winter days.

You may know this dish by a variety of names: Hobo Stew, Beggar Stew or Mulligan stew are of few.

My grandma, who raised me, used to make this on Sundays. I always enjoyed entering the warm house from the brisk fall or winter air, to be welcomed by the smell of this stew. 


Ahhhh... memories.

I like making this crockpot meal because it's fast, easy and affordable. In today's recipe I didn't include potatoes, but I usually do and you certainly can.



Perfect Hearty Chili Recipe

This hearty chili recipe offers just the right balance of sweet and spicy.

I love chili. I don't often make it, but when I do, it's an event! The following is a very hearty chili recipe. The tomatoes and sweet peppers offer a sweetness which is readily followed by a spicy hotness. 

If you like spicy foods, eat it alone. If you need to tone down the amount of spice, eat it with saltines or sweet corn bread. Or throw a dollop of sour cream into the chili. It is easily balanced. That how we do it. The youngest children can tame the "hot" while the adults the spiciness.
